Chicken and Caramelized Mushrooms

Mushrooms are magically low in calories. They also have wonderful health benefits like selenium, which is great for the bladder. Oyster mushrooms used in this recipe have a high iron content. For this pairing, you will caramelize and couple the mushrooms with butterflied chicken breasts (a technique used by butchers to make a thick, compact piece of meat into a larger, thinner piece). You can serve this meal with brown rice if you’d like. This recipe is from Blue Apron. For the original recipe and directions, click here.
