

Quick Baked Avocado Egg

Like your eggs sunny side up? How about over an avocado? Might sound bizarre to some, but we promise it’s yum. We saw this recipe on the @vitaminshoppe instagram feed and knew we had to try it! We have to say, it has a surprisingly meaty taste to it!
All you need is an avocado and a couple of eggs. Preheat oven to 425 degrees. Slice avocado in half and remove pit, leaving the skins on. Scoop out enough space for the contents of the egg to fit. Place avocado halves into baking dish. Crack an egg into each avocado center. Bake for about 15 minutes or until egg has cooked to your desire. Sprinkle with your favorite seasoning and a drizzle of olive oil. Pair with a slice of whole wheat or multi-grain toast (optional).
