Mushrooms are magically low in calories. They also have wonderful health benefits like selenium, which is great for the bladder. Oyster mushrooms used in this recipe have a high iron content. For this pairing, you will caramelize and couple the mushrooms with butterflied chicken breasts (a technique used by butchers to make a thick, compact piece of meat into a larger, thinner piece).
